Steamed buns are one of my favorite comfort food. It is totally satisfying when you need some carb kick. One can really play around or be creative with the filling once you know the art of making the buns. I find the ones available in Chinese restaurants are too sweet as they use a sweet bean paste. This is my style steamed buns.
Chinese style steamed buns
- 1 cup flour
- 1 tbs yeast
- 1 tbs sugar
- 1 tsp salt
- 1/4cup milk
- 2 tbs oil
- Extra flour to roll
Mix lukewarm milk with yeast and sugar. Keep aside till bubble forms on top.
Place the flour in a work surface. Make a well in the center. Pour the yeast solution , salt and oil on the well. Gradually mix to form a lumpy dough. Now sprinkle some flour and knead really well for about 5 mins so that the dough is smooth and springy. Cover the dough and keep aside till double in size.
Punch back the dough to get rid of excess air. Form 4-6 roundels. Stuff each roundel with the prepared filling. Steam in a bamboo steamer / or any steamer for 6-7 mins. Serve with a spicy dimsum sauce.
Filling :- you can use a vegetarian filling made with shredded cabbage, chillies garlic , coriander tofu/paneer
I have used sautéed chicken mince, spring onion , garlic, chillies, star anise , soy sauce, palm sugar and salt and corn flour in oil
